Three Chocolate Families
Caramel Cream Center Bars
Two 100g divisible bars, built on the same principle: a chocolate coating, a salted butter caramel cream filling. The first is coated in dark chocolate with a minimum of 70% cocoa, the second in milk chocolate with 41%. Same center, only the cocoa content of the coating changes.
The filling combines sugar, fresh cream and 18% butter, with Guérande salt and Guérande fleur de sel. The texture is crunchy then melting: the coating gives way first, followed by the center.
Chocolate Truffles
The Chocolate Trufflescome in a 250g tin box. They are bell-shaped and uniformly coated with cocoa powder. Their texture is soft and melting, with a hint of cocoa bitterness.
This is the largest format: 250g, compared to 100g for the bars and 70g for the florentines. The box is made of tin and can be kept once the truffles are finished.
Almond and Orange Florentines
Two 70g references in cardboard boxes from the Collector range: Dark Chocolate and Orange Florentinesand Milk Chocolate and Orange Florentines.
The principle is the same in both cases: a round biscuit with slivered almonds, honey and orange peel, coated in dark chocolate with a minimum of 70% cocoa or milk chocolate with 41%. The texture is melting and crunchy. The almond provides the crunch under the coating.
If you're unsure
For a minimum of 70% cocoa, choose the dark chocolate references. For 41%, the same recipes in milk chocolate. For a gift without hesitation, the 250g tin box of truffles, which can be shared and whose box can be kept.
The company also offers pure butter chocolate biscuits, with different intensities: Le Sablé Éclats de chocolat and Le Palet Tout chocolat, with a dominant butter and chocolate flavor, and Les Pépites Tout chocolat, with a pronounced dominant chocolate flavor.
Storage and Tasting
Chocolate should be stored in a dry and cool place, away from humidity and heat. Upon receipt, truffles should be consumed within four months, florentines and bars within six months. The expiry date is on each package.
The bars travel in their sleeve, the truffles in their tin box, the florentines in their box. In summer, store the package immediately upon receipt. Truffles are more sensitive to heat than the rest.
