Since 1888, the biscuit factory has perpetuated the recipes of Annette Poulard, chef at the Mont-Saint-Michel inn. The sablé, palet, and grande galette bear the inscription 1888, engraved in the biscuit.

The Butter Palet

Thicker and more generous, the palet stands out with a sandy and crumbly texture, which gives it more substance in the mouth. A recipe with a more intense buttery taste, for lovers of rich and indulgent biscuits.

The Large Butter Galette

Fine and particularly crispy, it offers a lighter taste in the mouth and fully expresses the buttery notes of the recipe. Its large oval shape is immediately recognizable.

The Butter Petit Beurre

A fine, dry, and crunchy biscuit, with a firmer texture than the shortbread or palet. Its simple and balanced profile makes it particularly suitable for tea or coffee. It is recognizable by its square shape with fifty teeth and the inscription of Mont-Saint-Michel.

The Butter Cookies / Chunks

They are distinguished by a more generous and crispy texture, enriched with inclusions depending on the recipes: chocolate, fruit, caramel. The Cookies offer a larger format, while the Chunks offer a smaller and more gourmet bite, easy to share.

The list is short. This is intentional. Wheat flour grown in France, butter, sugar or brown sugar, eggs, salt. Butter ranges from 14% for the petit beurre to 24% for the plain palet and the large galette, with 20 to 23% for the shortbreads. The complete composition is listed on each product sheet and on the packaging.

Our recipes are free of preservatives, artificial flavors, and palm oil. Gluten, milk, and eggs are present throughout the range, soy in some parts.
